Chef Diego Muñoz, 1111 Peruvian Bistro
Chef Diego Muñoz is a Peruvian-born, Parisian-trained culinary dynamo who, earlier this year, opened his first U.S. endeavor, 1111 Peruvian Bistro in Brickell. Muñoz’s previous claim to fame was helming the kitchen at Astrid y Gastón in Peru, which was ranked the 14th best restaurant in the world, according to San Pellegrino’s “World’s 50 Best Restaurants.” The accomplished chef also worked in Spain at Ferran Adrià’s El Bulli, in Paris at the Michelin-starred Le Grand Véfour, and as the professional chef of luxury cruise line, Silversea Cruises. At the casual-chic 1111, Muñoz presents traditional Peruvian creations like crudos, ceviches and causas while adding his own innovative twist. 1111 SW First Ave., Miami; 786.615.9633; 1111peruvianbistro.com
