Mosto verde is a method of making pisco from “must” (grape juice) that has not completely fermented; this serves to keep some of the natural grape sugars from converting their flavor into alcohol.
Portón is artisanally crafted in small batches with estate-grown grapes and rests for 12 months before being bottled at Hacienda La Caravedo in Ica, Peru – the oldest distillery in the Americas. This delicate and long process is never altered by aging in wood, or by the addition of water or artificial flavor and color. What is created is a perfect 86 proof pisco, with a finish that is smooth, delicate, long and luxurious. It’s a taste experience that can surprise even the most sophisticated of palates.

The Portón Pisco Sour
1 ½ parts Portón pisco
½ part fresh lime juice
½ part simple syrup
¼ part egg white
Combine ingredients in a shaker with ice and shake. Strain contents into a chilled glass.
